East Kutai Tourism Dept conducts creative economy training for culinary entrepreneurs

Creative economy training for the culinary subsector aims to develop human resource capacity for 75 culinary entrepreneurs in Kaubun, Sangkulirang, Kaliorang, and North Sangatta.

Heaptalk, Jakarta — The East Kutai Tourism Department organized creative economy training for the culinary subsector for three days on June 20-22, 2023, at the D’lounge Room, Hotel Royal Victoria, North Sangatta.

Participants consisted of 75 culinary entrepreneurs in the Districts of Kaubun, Sangkulirang, Kaliorang, and North Sangatta. In addition, representatives from the East Kutai Indonesian Tour Guide Association (HPI) also participated in this training.

According to the Head of the East Kutai Tourism Department, Nurullah, this culinary training is included in 17 creative economy subsectors with the aim of developing human resource capacity, particularly in the culinary field.

“We invite them to prepare business actors in the culinary field, especially in the East Kutai area, to adjust to national serving standards. Many of the participants came from outside Sangatta. We hope they can apply the knowledge they have learned here in their respective areas,” said Nurullah.

Further, he also expects that the participants can properly absorb the knowledge provided by the speakers. Thus, in the future, they can produce quality food products that can be sold as gifts for visitors who come to East Kutai.

Nurullah added, “For packaged products, currently we have banana chips and amplang (savory fish crackers) which are well-known in East Kutai. That is also one form of development that we encourage and promote as we know that foreign tourists coming to Kutai certainly want to taste the unique culinary delights besides visiting tourist destinations.”

Meanwhile, one of the speakers, namely Chef Joko Utoro, said that in the creative economy training for the culinary subsector, participants would learn several materials including bakery, pastry, as well as plating, garnish, and jelly art techniques.

Joko said, “According to the suggestion from the East Kutai Tourism Department which wants to explore the potential of local food ingredients, on the first day for bakery and pastry materials, we will practice how to make yellow sweet potato bread and taro bread. On the second day, the material is plating techniques with the practice of using grilled fish combined with the typical Miang Island clam spicy sauce.”
